Scope and Contents

Includes photographs of exterior and interior scenes in the factory, group photographs of factory workers, and photographs of boats, especially the "Fish Hawk." Collection also includes a photograph of Cherryfield, Maine taken in 1899 and a photograph of William J. Underwood as well as one of William Lyman Underwood and of Alice and Marguerite Underwood. Three photographs were taken by Coffin Bros. photographers, Freeport, Maine; no other photographer is identified in the collection.

Historical Note

The company was established in Boston in the early 1820s by William Underwood, who had arrived in the U.S. from England in 1817. Its first products were fruits and berries which were preserved in glass jars. In 1839 the company began using tin canisters to preserve its products. In 1844 the company established a lobster cannery at Harpswell, Maine. At the death of William Underwood in 1864, management of the company passed to his son, William J. Underwood. His sons, Henry Oliver Underwood and William Lyman Underwood, later went into partnership with their father. The company's best-known product, Underwood deviled ham, appeared in 1865. In 1880 the company built a plant in Jonesport, Maine, where sardines, clams, lobsters and other fishery products were canned. It also operated a sardine factory in Bass Harbor, Maine. The cannery at Jonesport seems to have closed around 1962, and the company's remaining products are now marketed by B&G Foods, Inc.
